Firstly I would really do some market research and even work on someone else’s catering trailer business before you splash out on a trailer to cater for big events. I feel you really need some experience before you can cook for 100’s or 1000’s of people, really find out how the business works before you commit.
Big events charge big money and if you don’t get enough stock or don’t know how to cook for large quantities of people you are going to lose a lot of money and probably won’t make back you initial investment. (I really don’t want you to loose money)
If you’re still adamant about catering for big events look at www.eventsbook.co.uk which list events from all over the country. It will provide contact details for different event organisers which you can contact to inquire about prices and procedure.
