started up a jiffy van

Hi, this website is amazing! Basically I have a cafe and have just got myself a second hand jiffy van which ive had out now over a week and its doing really well. However im using foil catering bags to place the likes of toasties/paninis in to keep warm but im finding they are sweating in the bags and going soggy very quickly. I was just wondering if anyone could help or give tips on any other packaging to use? Was thinking of just wrapping in greaseproof paper then placing in a paper bag? Thanks any advice would be gratefully appreciated :)

For your toasties and paninis, the sweating issue is quite common with foil bags because they trap steam. Switching to greaseproof paper is a great idea as it allows the food to breathe a bit more. You can wrap them in greaseproof paper and then pop them into a vented paper bag – this helps retain warmth without making them soggy.

Another option to consider is biodegradable sandwich wraps or perforated packaging, which are designed specifically for hot foods. They let the steam escape while still keeping everything warm.

Also, if you can, keep the toasties slightly elevated in your van’s warmer (using a rack or something similar) to improve airflow around them – that can help too.
