Starting up a Burger stall... Please Help! : )

Hi all,
I am planning on starting up my own market stall selling burgers. However I am completely new to the market world, as all my working life I have been a nanny and think now is the right time for change and I long to work for myself.
I really need some help on exactly what cooking equipment I need that will be suited for an outside market? i.e., what type and size of griddle will I need, what size thermo boxes, what type of Bain Marie will I need and will all my equipment have to run on gas etc and any ideas where I can purchase all this for reasonable prices?
Also is it true that itβs a legal requirement to have access to hot and cold running water if you are cooking food? If so, how do you overcome this hurdle in market situation?
Any other hints or tips you have to offer would be greatly appreciated.
