Starting up a new venture. From Police to Salads

by Sam Robertson

Hi there, I'm just after general information.

Im currently converting a caravan into a vintage catering unit selling healthy vegan, vegetarian and healthy foods.

Ive gone from being a child protection Detective to now trying my hand at a healthy eating stall and boy is it STRESSFUL.

The caravan is currently being converted and lots of questions have arisen.

1. Do you need hygienic cladding in the unit? I was going to have a 2ft splash back wall all the way around. Then above that just have paint/wall paper?

2. I am purchasing all electrical equipment as I have a pop up electrical point where i'll be positioned-if I were to move areas, would it be quite easy to use a generator to power the electrics?

3. I am buying a salad counter to make premade salads and a griddle to make bean and turkey burgers. These items seems to be quite expensive. Is ebay the best place to purchase these items?

4. Is it normal to feel apprehensive and wanting to quit everyday as your scared of failure?

Thanks for your help- the website is great!!!

Transition from Policing to Catering!
by: David-

It sounds like you’re making an exciting (but understandably stressful) transition from policing to catering! First of all, don’t worry—every new business owner feels nervous, especially when stepping into a completely new industry. Let’s tackle your questions one by one.

1. Do you need hygienic cladding?
Yes, hygienic, easy-to-clean walls are a must in a catering unit. A 2ft splashback is good, but you need wipeable, non-absorbent surfaces throughout (no wallpaper or standard paint). The best options are:

PVC hygienic wall cladding (widely used in catering vans)

Stainless steel (for areas near cooking equipment)
Gloss or food-safe paint (only if approved by your local environmental health officer)
Check with your local council’s Environmental Health Department for their specific requirements.

2. Using a generator vs. mains electricity
Since you have access to a power point, that’s great! But if you move locations, a generator will give you flexibility.

Look for a silent, inverter generator (Honda, Hyundai, or Greengear LPG are popular brands)
Make sure it produces clean power (pure sine wave) to run delicate electrical equipment
Check the wattage of all your appliances so you get a generator with enough power

3. Where to buy equipment?
Ebay can be hit or miss—you might find bargains, but also a lot of used, unreliable equipment. Other options:

Facebook Marketplace & Gumtree – Many food businesses sell used catering gear
Auction sites – Bidfood Auctions & Caterquipstore often have good deals
Catering equipment suppliers – Try Nisbets, or MobCater Catering

If buying second-hand, check for wear & tear, and always ask if it's been PAT tested (for electrical safety)And if LPG Gas make sure it has CE.

4. Feeling scared of failure? Completely normal!
Every mobile caterer has been in your shoes. It’s a huge change, and self-doubt is normal. The key is to:

Take it one step at a time – Break tasks into small, manageable chunks Focus on your WHY – You’re bringing healthy food to people, and that’s amazing! Connect with other caterers – Join Facebook groups or forums for support Remember, every expert was once a beginner – Give yourself time to learn and grow You’ve already taken the hardest step: starting! Keep going, and you’ll find your way.
