What Sort of Stock - Do you Carry and How Often Do you Re-stock

Hi I was really impressed with your articles, they have realy made me think. I am looking at setting up a mobile catering van for my brother and nephew to operate for me as I work full time and I am trying to also help him out workwise.

I am thinking of a breakfast / hot sandwich van to start with ideally positioned on a good pitch Monday to Friday with the possibility of travelling to events, markets etc on weekends.

Could you please advise me on average daily stock quantities I would need to take out and also recomend how often you visit the wholesalers.

Do you do it first thing in the morning so it is fresh, after trading ready for the next day or once a week and keep it frozen / refrigerated.

How Busy Is Your Catering Busy?

Hi Craig,

This is difficult question to answer as it all depends on how busy your business becomes. If it ticks over then probably 1-2 times a week should be okay. For a really busy pitch it would be normal to visit the wholesalers. If it ever gets to this stage you could always have them deliver the food for you to store, this would save you running up and down to the wholesalers everyday.

Most of the food you can buy frozen like buns, burgers, bacon and then defrost when ever you need it. If you need French sticks you could also find a bakers that delivers in the morning, or just pop into your local supermarket.
